Air Fryer Chipotle Chicken Taquitos: The Perfect Game Day Snack

When it comes to football snacks, taquitos are a Superbowl staple every times time. They’re easy to prepare in large batches and even easier to eat one-handed while cheering on your favourite team! No more juggling utensils or plates while shouting at the TV!
These chipotle chicken taquitos are always on the menu for the Superbowl. This recipe is so easy to make and only requires a handful of ingredients and 20 minutes of your time!
What are taquitos?
These delightful handheld snacks are a Mexican-inspired dish consisting of small, rolled-up tortillas filled with savoury ingredients such as beef, chicken, beans or cheese. The filled tortillas are tightly rolled and then fried or baked until crispy. Their name comes from the Spanish word ‘taco’.

Ingredients
Chipotles in adobo sauce
Chicken breasts
Cream cheese
Chipotle seasoning
Salt
Tortilla, corn or flour, whatever your preference
Shredded cheddar cheese
Steps

Warm cream cheese in the microwave if it isn’t already room softened. While you’re doing that, shred the chicken. I find that cooking my chicken breasts in the instant pot is the easiest way to get shreddable meat.
Take 3 chipotle peppers from the sauce and finely chop.
Once the cream cheese is softened and the chicken is shredded, combine them with the peppers and 1 Tbsp of the adobo sauce, shredded cheese, salt, and chipotle seasoning.
Place a small amount in a line in the center of a tortilla, making sure it isn’t too full that it will squish out the ends. Tightly roll the tortilla and place into an air fryer, seam down to prevent it from unrolling.
Turn the air fryer to 390 F and fry for 5 minutes, or until tortillas are slightly browned and crispy.
Serve hot with desired toppings
